Asparogus And Corn Salad

 

INGREDIENTS

  • 6 - 7 fresh asparagus spears (100 gms)
  • 50 gms fresh corn
  • 100 gms tomatoes
  • 6 - 7 baby potatoes (100 gms)


SEASONING

  • 2 tbsp spinach sauce


METHOD

  1. Slice tomatoes. Boil and peel potatoes.
  2. Put asparagus spears in a shallow pan. Pour boiling water over them.
  3. Add salt and allow to simmer for 10 minutes.
  4. Remove and pour ice cold water. Drain. This will keep asparagus fresh and green. Set aside.
  5. Arrange salad bowl with potatoes, corn and asparagus, keeping tomato slices on outer side.
  6. Pour spinach sauce over salad.
  7. Chill and serve.
