Broccoli with Bacon Salad
This quick and easy broccoli dish pairs well with fish or cheese entrees. The simple bacon and crumb topping perks up cooked cauliflower or spinach, too.
INGREDIENTS
- 4 strips bacon
- 3 green onions
- About 1 1/2pounds broccoli
- 3/4 cup fine dry bread crumbs
METHOD
Cook bacon in a wide frying pan over medium heat until crisp; lift out, drain, crumble, and set aside. Reserve drippings in pan.
Insert slicing disc. Slice onions Cut flowerets from broccoli. Trim and discard tough stem ends; peel stems. Cut into lengths to fit vertically in feed tube, and then pack into feed tube and slice. Place broccoli on a rack, keeping flowerets and stems separate. Steam, covered, over boiling water until tender to bite (about 3 minutes). Keep warm.
Warm bacon drippings over medium heat. Stir in bread crumbs and onions. Mound broccoli stems in center of a warm platter; surround with flowerets. Evenly sprinkle crumb mixture, then bacon, over stems. Makes about 6 servings.
