Chick Pea Penut And Wheat Sprout Salad

 

INGREDIENTS

  • 100 gms wheat sprouts
  • 100 gms chick pea sprouts
  • 150 gms cucumbers
  • 100 gms tomatoes
  • 1 slice pineapple (50 gms)
  • 50 gms spring onions, finely chopped
  • 10 gms peanuts, roasted
  • 2 tbsp coriander or parsley leaves, chopped finely


SEASONING

  • 1/2 tsp red chili powder (optional)
  • 2 tsp lemon juice
  • 1/2 tsp pepper, freshly ground
  • Salt to taste


METHOD

  1. Cut cucumbers, pineapple and tomatoes into bite-sized pieces.
  2. Mix sprouts with pineapple, cucumbers, tomatoes, onion and peanuts in a bowl.
  3. Add lime juice, chili powder, pepper and salt. Toss.
  4. Garnish with coriander or parsley leaves.
