Chick Pea Penut And Wheat Sprout Salad
INGREDIENTS
- 100 gms wheat sprouts
- 100 gms chick pea sprouts
- 150 gms cucumbers
- 100 gms tomatoes
- 1 slice pineapple (50 gms)
- 50 gms spring onions, finely chopped
- 10 gms peanuts, roasted
- 2 tbsp coriander or parsley leaves, chopped finely
SEASONING
- 1/2 tsp red chili powder (optional)
- 2 tsp lemon juice
- 1/2 tsp pepper, freshly ground
- Salt to taste
METHOD
- Cut cucumbers, pineapple and tomatoes into bite-sized pieces.
- Mix sprouts with pineapple, cucumbers, tomatoes, onion and peanuts in a bowl.
- Add lime juice, chili powder, pepper and salt. Toss.
- Garnish with coriander or parsley leaves.
