Salad : Confetti Coleslaw


Confetti Coleslaw Salad

Crisp apple bits, cabbage, car¬rots, and green onion make a crunchy, colorful counterpart for a sweet-tart yogurt dressing.

INGREDIENTS

  • 1 small head red or green cabbage
  • (about 1 1/4 lbs.) 4 green onions
  • 2 large carrots
  • 2 medium-size tart apples (unpeeled)
  • 1 cup plain yogurt
  • 1/4 cup mayonnaise, purchased or homemade
  • 3 tablespoons white wine vinegar
  • 1 tablespoon sugar
  • 1/2 teaspoon dry tarragon Salt and pepper


METHOD

Insert slicing disc. Shred cabbage; transfer to a large mixing bowl. Slice onions aand add to cabbage.

Change to shredding disc. Shred carrots; add to cabbage mixture.
Change to metal blade. Chop apples; add to cabbage mixture and stir until thoroughly combined. Place yogurt, mayonnaise, vinegar, sugar, and tarragon in work bowl. Process continuously until combined. (At this point, you may cover and refrigerate dressing and cabbage mixture separately until next day.)

To serve, pour dressing over cabbage mix¬ture; toss to combine. Season to taste with salt and pepper. Makes 6 to 8 servings..
