Salad : Power Packed Salad



Power Packed Salad

 

INGREDIENTS

  • 1 cup black-eyed pea sprouts (100 gms)
  • 1/2 cup whole green gram sprouts (50 gms)
  • 1 medium orange or sweet lime (100 gms)
  • 1 medium cucumber (100 gms)
  • 1/2 onion, finely chopped (50 gms)
  • Dates (20 gms)
  • Walnuts (10 gms)


SEASONING

  • 2 tsp lemon juice
  • 1/2 tsp curry powder
  • 1/2 tsp sugar
  • Salt to taste


METHOD

  1. Peel orange and separate segments.
  2. Cut cucumber into small pieces.
  3. Destone and chop dates. Break walnuts into small pieces.
  4. Mix sprouts with onion, cucumber and orange.
  5. Mix lemon juice, salt, sugar and curry powder in a jar.
  6. Drizzle over salad.
  7. Garnish with dates and walnuts.
