Salad : Power Packed Salad
Power Packed Salad
INGREDIENTS
- 1 cup black-eyed pea sprouts (100 gms)
- 1/2 cup whole green gram sprouts (50 gms)
- 1 medium orange or sweet lime (100 gms)
- 1 medium cucumber (100 gms)
- 1/2 onion, finely chopped (50 gms)
- Dates (20 gms)
- Walnuts (10 gms)
SEASONING
- 2 tsp lemon juice
- 1/2 tsp curry powder
- 1/2 tsp sugar
- Salt to taste
METHOD
- Peel orange and separate segments.
- Cut cucumber into small pieces.
- Destone and chop dates. Break walnuts into small pieces.
- Mix sprouts with onion, cucumber and orange.
- Mix lemon juice, salt, sugar and curry powder in a jar.
- Drizzle over salad.
- Garnish with dates and walnuts.
