Rice And Kidney Bean Salad
INGREDIENTS
- 1/2 cup kidney beans (50 gms)
- 1/2 cup boiled rice (preferably brown)
- 100 gms French beans
- 100 gms cucumber
- 2 tbsp tomato sauce Coriander leaves, chopped finely
METHOD
- Boil kidney beans in just enough water till tender.
- Trim and cut French beans into half and blanch
with a pinch of salt. Slice cucumber.
- In a bowl, mix tomato sauce with kidney beans and rice. Keep aside.
- Arrange cucumber slices and French beans on salad dish.
- Spread rice mixture over cucumber slices and French beans.
- Garnish with coriander leaves.
