Workout Salad
INGREDIENTS
- 1 cup black-eyed pea sprouts (100 gms)
- 30 gms red kidney beans
- 1/2 capsicum (20 gms)
- 50 gms pink radish
- 1 tomato (100 gms)
- 1 onion (100 gms)
SEASONING
- 1 tsp sugar (optional)
- 2 tsp peanut chutney
- 2 tsp lemon juice
- Salt to taste
METHOD
- Soak kidney beans overnight. Rinse in fresh water. Boil till tender.
- Cut radishes and capsicum into thin strips.
- Chop onion. Cut tomato into bite-sized pieces.
- Mix kidney beans, sprouted black-eyed peas,
capsicum, radish, tomato and onion in a bowl.
- Add peanut chutney, lemon juice and salt. Stir well.
- Place mixture on a salad dish. Chill and serve.
