Salad : Workout Salad



Workout Salad

 

INGREDIENTS

  • 1 cup black-eyed pea sprouts (100 gms)
  • 30 gms red kidney beans
  • 1/2 capsicum (20 gms)
  • 50 gms pink radish
  • 1 tomato (100 gms)
  • 1 onion (100 gms)


SEASONING

  • 1 tsp sugar (optional)
  • 2 tsp peanut chutney
  • 2 tsp lemon juice
  • Salt to taste


METHOD

  1. Soak kidney beans overnight. Rinse in fresh water. Boil till tender.
  2. Cut radishes and capsicum into thin strips.
  3. Chop onion. Cut tomato into bite-sized pieces.
  4. Mix kidney beans, sprouted black-eyed peas, capsicum, radish, tomato and onion in a bowl.
  5. Add peanut chutney, lemon juice and salt. Stir well.
  6. Place mixture on a salad dish. Chill and serve.
